SZECHUAN SPICED NOODLES

Preparation Method :

  • Combine the oil, half the ginger, the peppercorns, garlic, soy sauce, sesame oil, vinegar and sugar together in a bowl. Set aside.
  • Heat the 2 tablespoons peanut oil and add the rest of the ginger. Stir-fry the prawns and pork until done, about 10 minutes, and remove. Stir-fry the celery until slightly soft, remove and drain.
  • Place the noodles on a hot serving dish, add the celery, and top with the prawn mixture. Pour the sauce over the top and garnish with the onions.
  • Serve this dish as a main course after a clear soup. 

INGREDIENTS

  • 6 tablespoonIDHAYAM Sesame Oil
  • 2 teaspoons finely chopped ginger root
  • ½ teaspoon Szechuan peppercorns, crushed
  • 1 clove garlic, crushed
  • 3 tablespoons dark soy sauce
  • 3 tablespoons rice wine vinegar
  • 4 teaspoons sugar
  • 450 grams prawns, peeled and de-veined
  • 175 grams cooked pork, cut into strips
  • 2 stalks celery, cut into matchstick strips
  • 450 grams thin egg noodles, cooked small bunch spring onions, chopped (including green parts)
