Preparation Method :
- Cook the noodles for 30 seconds, drain, and rinse with cold water. Set aside.
- In a small bowl, combine chili sauce, dark soy, sugar, ¼ teaspoon salt, oyster sauce and ketchup. Stir to combine, and set aside.
- Heat oil a large pan, preheated over high heat. Crack the eggs into the pan, stir vigorously until the eggs are lightly scrambled, then add the garlic, noodles, bean sprouts, cabbage, chicken, and water.
- Stir-fry continuously until noodles and chicken are cooked.
- Add chili sauce mixture, and keep stirring until well combined.
- Add white pepper, stir to combine, and remove from heat.
- Garnish with scallions and fried shallots.

- 400 grams fresh Chinese egg noodles
- 2 Tablespoon chili sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon sugar
- ¼ teaspoon salt
- 3 Tablespoon oyster sauce
- 3 Tablespoon ketchup
- 2 Tablespoon IDHAYAM sesame oil
- 2 eggs
- 1 teaspoon minced garlic
- 200 grams mung bean sprouts, rinsed
- 100 grams shredded cabbage
- 250 grams boneless chicken breast, cut into cubes
- ¼ teaspoon white pepper
- 2 Tablespoon scallions, sliced
- 2 Tablespoon fried shallots
