SEARED TUNA ON JAPANESE-STYLE NOODLES

Preparation Method :

  • Cook the noodles in plenty of boiling water for about 4 minutes or according to packet instructions. Drain and toss with half of the sesame oil. Keep warm while you cook the tuna.
  • Heat a heavy frying pan over a high heat. The pan is hot enough if you can hold your hand over it for no more than 5 seconds. Combine the mirin and the remaining sesame oil in a small bowl and brush over both sides of the tuna.
  • Place the tuna in the hot pan and press down with a spatula. Cook for 1 minute. Turn and cook on the other side for 1 minute.
  • Remove from the pan, cover and leave to rest for 1 minute.
  • Grind some black pepper over the tuna and put it on a carving board. Holding the fish in shape with one hand, slice it thinly with a very sharp knife.
  • Place the noodles on a serving platter, and arrange the tuna slices on top. Sprinkle the tuna with the spring onions and serve accompanied by shredded pickled ginger and soy sauce.

INGREDIENTS

  • 250 grams thin soba noodles
  • 4 teaspoon sesame oil
  • 2 tablespoon mirin
  • 500 grams piece of tuna
  • Freshly ground black pepper
  • 4 spring onions, finely chopped

To Serve

  • Shredded pickled ginger
  • Soy sauce
