RED BEEF NOODLES

Preparation Method :

  • Make the spice paste. Grind the coriander seeds, garlic and gingei together in a mortar and pestle or spice grinder.
  • Add the sugar, soy sauce, sesame oil, tomato puree, rice vinegar, cayenne and sesame seeds. Set aside to infuse.
  • Preheat the oven to 180°C/350°F/Gas 4. Roast the peppers for 30 minutes or until the skin has blistered.
  • Put into a plastic bag, or cover with damp kitchen paper, and leave until cool enough to handle. Peel off and discard the skin and finely chop the flesh.
  • Cook the noodles in plenty of boiling water for 2 minutes or according to packet instructions. Drain.
  • Heat the oil in a wok or large open pan over a moderate heat. Add the mustard seeds and cover the pan immediately. The seeds will pop in the hot oil; when the popping has subsided, remove the lid.
  • Add the spice paste and stir-fry until it is fragrant. Increase the heat, add the chopped red pepper and stir-fry for 1 minute, then add the strips of beef.
  • Stir-fry over a high heat for 2 minutes or until the beef just cooked. Spoon the mixture over the noodles, garnish with red basil leaves and serve immediately. 

INGREDIENTS

  • 6 red peppers, halved, seeded and cored
  • 750 grams noodles
  • 2 tablespoon sesame oil
  • 4 teaspoon yellow mustard seeds
  • 500 grams sirloin steak, cut into strips
  • Fresh red basil leaves, to garnish

For The Spice Paste

  • 2 tablespoon coriander seeds
  • 4 garlic cloves, crushed
  • 2 inch piece root ginger, shredded
  • 2 tablespoon caster sugar
  • 2 tablespoon soy sauce
  • 3 teaspoon sesame oil
  • 3 tablespoon tomato puree
  • 3 teaspoon rice vinegar
  • 2 teaspoon cayenne pepper
  • 3 tablespoon sesame seeds
