Preparation Method :
- Cut the spring onions into lengths and slice each piece lengthways very finely.
- Heat the oil with the garlic in a wok or large open pan. Add the spring onions and field mushrooms and stir, then add the shiitake mushrooms followed by the oyster mushrooms.
- Stir again, then add the porcini. Stir-fry the mushrooms until fragrant. Season with soy sauce.
- Put the noodles in a large bowl and cover with boiling water. Leave to stand for 3 minutes or according to packet instructions, then drain.
- Pile the noodles on a serving plate. Discard the garlic clove, and spoon the mushrooms and all the pan juices over the noodles. Serve hot.

- 4 spring onions
- 4 tablespoon sesame oil
- 2 garlic clove, unpeeled, lightly crushed
- 150 grams field or button mushrooms, quartered
- 100 grams shiitake mushrooms, sliced
- 100 grams oyster mushrooms, sliced or halved
- 30 grams dried porcini, soaked in warm water for 15 minutes
- Light soy sauce, to taste
- 250 grams egg thread noodles
