Preparation Method :
- Put the mooli, ginger and spring onion in three small serving bowls.
- Bring the stock to the boil in a saucepan and blanch the beans for 2 minutes. Remove with a slotted spoon and set aside.
- Blanch the carrot matchsticks for 1 minute only, remove with a slotted spoon and set aside. Flavour the stock with the mushroom ketchup.
- Cook the noodles in plenty of boiling water according to packet instructions, then drain.
- Pile the noodles in the serving bowls. Divide the beans, carrot, tofu cubes and watercress among the bowls.
- Ladle on the hot stock, and serve immediately, accompanied by the spring onion, ginger, mooli and soy sauce to be added according to personal taste.

- 2 spring onions, finely sliced
- 2 litres vegetable stock
- 100 grams French beans
- 2 carrots cut into matchsticks
- 2 tablespoon mushroom ketchup
- 500 grams ramen noodles
- 200 grams firm tofu, cubed
- 100 grams watercress
- Soy sauce, to serve
