- Heat 1 teaspoon oil with the butter in a small pan until melted and then stir in the eggs and keep stirring until scrambled. Set them aside.
- Heat the remaining oil in a large pan and fry the garlic with the chicken and pork for 2 minutes or until the colour changes.
- Add the prawns, spinach, celery and spring onions, toss well.
- Add the drained noodles and toss well till all the ingredients are well mixed. Add enough stock just to moisten and soy sauces to taste. Stir in the beaten eggs.
- Garnish the dish with Deep-fried Onions and celery leaves.
INGREDIENTS
- 150 grams, peeled, cooked prawns
- 100 grams spinach or Chinese cabbage
- 500 grams dried egg noodles, cooked and drained
- 100 grams chicken breast fillets, skinned, finely sliced
- 125 grams pork fillet, finely sliced
- 75 ml Cooking oil
- 20 grams butter or margarine
- 3 garlic cloves, crushed
- 2 eggs, beaten, seasoned
- 2 celery sticks, finely sliced
- 4 scallions, shredded
- 75 ml chicken stock
- Dark soy sauce and light soy sauce
- Salt and ground black pepper, to taste
- Deep-fried Onions and celery leaves, to garnish
