GREEN NOODLES

Preparation Method :

  • To make the sauce, grind the garlic, salt, peppercorns and coriander together in a pestle and mortar, blender or spice grinder. Add the parsley, spring onions and chilli and grind to a rough paste.
  • Transfer the paste to a saucepan and stir in the lemon juice, coconut milk and peanut butter. Bring to a gentle boil, stirring occasionally.
  • Meanwhile, put the noodles in a large bowl and cover with boiling water. Leave to stand for 5 minutes or according to packet instructions. Drain well.
  • Toss the noodles with the sauce until they are evenly coated. Serve immediately, with lemon quarters.

INGREDIENTS

  • 2 garlic clove
  • 2 teaspoon salt
  • 2 tablespoon black peppercorns
  • 100 grams fresh coriander, including stalk and any root
  • 4 tablespoon chopped fresh parsley, preferably flat-leaf
  • 4 spring onions, roughly chopped
  • 2 fresh red chilli, seeded and sliced
  • 5 tablespoon lemon juice
  • 200 ml coconut milk
  • 4 tablespoon peanut butter
  • 250 grams flat rice noodles lemon quarters, to serve
