CHOW MEIN

Preparation Method :

  • Soak the mushroom in warm water for 15 minutes; drain, remove and discard the stalks and slice the caps.
  • Cook the noodles in plenty of boiling water according to packet instructions. Drain well and set aside.
  • Combine the vegetable stock, soy sauce, oyster sauce, hoisin sauce and sherry in a bowl and set aside.
  • Heat the oil in a large wok over a moderately high heat, add the spring onions and garlic and stir-fry for 1 minute.
  • Add the mushrooms, bamboo shoots and water chestnuts and stir-fry over a high heat for 1 minute. Add the bean sprouts and sauce mixture and stir until well combined.
  • Simmer for 2 minutes or until the sauce thickens slightly. Add the noodles to the wok and heat through, using two spoons to lift and stir until the noodles are evenly coated. Serve piping hot.

INGREDIENTS

  • 6 dried Chinese mushrooms
  • 500 grams chow mein noodles
  • 6 tablespoon vegetable stock
  • 2 tablespoon soy sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon hoisin sauce
  • 4 tablespoon dry sherry
  • 2 tablespoon sesame oil
  • 4 spring onions, sliced
  • 2 garlic clove, crushed
  • 100 grams canned bamboo shoots, drained
  • 10 canned water chestnuts, sliced
  • 150 grams bean sprouts
