CHICKEN NOODLE NESTS

Preparation Method :

  • Dip the rice noodles quickly into cold water, then drain and break into 5 cm / 2 inch pieces.
  • On a work surface or tray, space out 8 heaped teaspoons of the instant potato, and press some noodles into each heap.
  • Put another teaspoon of instant potato on top of each heap and press in some more noodles. Mould roughly into 7.5 cm / 3 inch round nests; you may need to shape the nests in your hands.
  • Grind together the coriander seeds, cumin seeds, cloves, star anise and peppercorns in a mortar and pestle or spice grinder. Set aside.
  • Heat the oil in a wok or deep frying pan. Test the temperature with a piece of noodle.
  • When the oil is hot enough, drop in one nest and gently flatten it between two spoons to hold the shape.
  • Fry, turning it over once, until it is golden brown. Remove and drain on plenty of kitchen paper. Fry the remaining nests, then season with salt and keep them warm.
  • Pour off all but the oil from the wok. Add the chicken, garlic, ginger and chillies and stir-fry until cooked.
  • Stir in the ground spices. Add the spring onions and stir-fry for a further 2 minutes. Add the coriander.
  • Put a deep-fried noodle nest on each plate and spoon some chicken on top. Top with another deep-fried nest and serve.

  • 150 grams flat rice noodles
  • 100 grams instant mashed potato mix, reconstituted
  • 2 teaspoon coriander seeds
  • 2 teaspoon cumin seeds
  • 5 cloves
  • 2 whole star anise
  • 2 teaspoon white peppercorns
  • Peanut Oil for deep-frying
  • 2 teaspoon salt
  • 500 grams chicken, cut into strips
  • 2 garlic clove, crushed
  • 2 inch piece root ginger, grated
  • 4 dried red chillies, seeded and sliced
  • 6 spring onions, sliced
  • 50 grams fresh coriander, coarsely chopped
