Preparation Method :
- Pour boiling water over the noodles to cover them and leave to stand for 3 minutes or according to packet instructions. Drain and rinse, then drain again well. Keep warm.
- Heat the oil in a wok or large open pan and stir-fry the spring onions and garlic over moderate heat for 1 minute.
- Add the oysters and sherry and stir-fry over a high heat for 1 minute. Stir in the soy sauce. Spoon the oysters over the noodles and serve.

- 200 grams egg thread noodles
- 3 tablespoon sesame oil
- 5 spring onions, finely sliced
- 4 garlic cloves, crushed
- 25 fresh oysters, shelled
- 5 tablespoon dry sherry
- 2 tablespoon light soy sauce
