- Combine the soy sauce and hoisin sauce in a bowl. Season generously with freshly ground pepper.
- Add the meat strips and leave to marinate for up to 1 hour, but no longer, or the soy sauce will toughen the meat.
- Cook the noodles in plenty of boiling water according to packet instructions. Drain and set aside.
- Heat both oils in a wok or large open pan over a high heat. Stir-fry the spring onions, ginger and red pepper for 1 minute. Add the meat and the marinade and stir-fry for 2 minutes.
- Add the noodles, stir in the rice wine and stock, then mix, using two spoons to lift and stir until the noodles are evenly coated and hot through. Serve immediately.

- 500 grams beef, thinly sliced across the grain
- 300 grams chow mein noodles
- 3 tablespoon sesame oil
- 5 spring onions, sliced diagonally
- 1 inch piece root ginger, shredded
- 2 red pepper, diced
- 4 tablespoon Chinese rice wine or dry sherry
- 150 ml strong beef stock
