THE JACKET BAKED POTATO SNACK - SEAFOOD TOPPING

Preparation Method :
- Wash potato under cold running water and remove any 'eyes'. Pat dry and using a sharp knife score around the circumference of potato.
- Place potato on edge of turntable and cook on High for 4 minutes, turn potato over, then cook for 2 minutes longer. Cut potato in half through the score mark.
- Top potato halves with tuna and cook on Medium for 1 minute, then top with sour cream, red and black caviar or lumpfish roe, chives, spring onions and parsley.

- 200 grams red-skinned potato
- 100 grams canned tuna in oil, drained and flaked
- 2 tablespoons sour cream
- 1 tablespoon red caviar or lumpfish roe
- 1 tablespoon black caviar or lumpfish roe
- Snipped fresh chives
- Finely chopped spring onions chopped
- Fresh parsley
