Preparation Method :
- Cut potatoes into quarters and place in a clean microwavable plastic bag. Twist neck of bag and fold to seal.
- Place bag on edge of turntable, patting potatoes into an even layer and cook on High for 8 - 10 minutes or until potatoes are just tender.
- Set aside until cool enough to handle, then cut into small cubes.
- Place spring onions, garlic and oil in a microwavable serving bowl, cover and cook for 4 minutes. Stir well.
- Add potatoes, cottage or ricotta cheese and sour cream and mix gently to combine.
- Sprinkle with Cheddar cheese, soy grits or oats and paprika and cook on Medium for 8 - 10 minutes.

- 250 grams sour cream
- 750 grams red-skinned potatoes, peeled
- 9 spring onions, thinly sliced
- 1 clove garlic, crushed
- 1 teaspoon Cooking oil
- 50 grams grated Cheddar cheese
- 1 tablespoon soy grits
- ¼ teaspoon paprika
