POTATOES KARENINA

Preparation Method :

  • Cut potatoes into quarters and place in a clean microwavable plastic bag. Twist neck of bag and fold to seal.
  • Place bag on edge of turntable, patting potatoes into an even layer and cook on High for 8 - 10 minutes or until potatoes are just tender.
  • Set aside until cool enough to handle, then cut into small cubes.
  • Place spring onions, garlic and oil in a microwavable serving bowl, cover and cook for 4 minutes. Stir well.
  • Add potatoes, cottage or ricotta cheese and sour cream and mix gently to combine.
  • Sprinkle with Cheddar cheese, soy grits or oats and paprika and cook on Medium for 8 - 10 minutes.

INGREDIENTS

  • 250 grams cottage or ricotta cheese, drained
  • 250 grams sour cream  
  • 750 grams red-skinned potatoes, peeled
  • 9 spring onions, thinly sliced
  • 1 clove garlic, crushed
  • 1 teaspoon Cooking oil
  • 50 grams grated Cheddar cheese  
  • 1 tablespoon soy grits
  • ¼ teaspoon paprika
