VEGETABLE MADRAS

Preparation Method :
- Grease the 10 cups dish with butter or ghee. Heat, uncovered, on Full for 2 minutes.
- Add the onion, leek and garlic and mix in thoroughly. Cook, uncovered, on Full for 4 minutes.
- Add the curry powder, cumin, garam masala, turmeric and lemon juice. Cook, uncovered, on Full for another 4 minutes, stirring twice.
- Add the stock, tomato puree and cashew nuts. Cover and cook on Full for 6 minutes.
- Stir in the vegetables. Cover and thoroughly heat on Full for 6 minutes. Serve with the brown rice and popadoms.

- 2 tablespoons toasted cashew nuts
- 500 grams mixed root vegetables, diced and cooked
- 150 grams brown rice, boiled
- 2 tablespoons ghee
- 1 onion, peeled and chopped
- 1 leek, trimmed and chopped
- 2 garlic cloves, crushed
- 1 tablespoon hot curry powder
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- ½ teaspoon turmeric
- Juice of 1 small lemon
- 150 ml vegetable stock
- 2 tablespoons tomato puree
- Popadoms, to serve
