RATATOUILLE
Ratatouille is simply one of the exceptional dishes that you can prepare at home! It looks so dashingly good when prepared, but once you get a taste on it you would eventually like it! It can be prepared for about 50 minutes, so hurry and complete all of its ingredients!

Preparation Method :
- Pour the oil into a 2 litres dish. Heat, uncovered, on Full for 1 minute. Mix in the onions and garlic. Cook, uncovered, on Full for 3 minutes.
- Stir in all the ingredients except half the parsley. Cover and cook on Full for about 16 minutes, stirring 4 times.
- Uncover and cook on Full for 10 minutes, stirring four times, until most of the liquid has evaporated. Mix in the remaining parsley.
- Serve hot or cool.
INGREDIENTS
- 4 tablespoons Cooking oil
- 4 onions, peeled and coarsely chopped
- 1 - 3 garlic cloves, crushed
- 250 grams courgettes (zucchini),thinly sliced
- 300 grams cubed aubergine
- 1 large red or green pepper,seeded and chopped
- 3 ripe tomatoes, skinned, blanched and chopped
- 2 tablespoons tomato puree
- 2 tablespoons light soft brown sugar
- Salt to taste
- 3 tablespoons chopped parsley
