Preparation Method :
- Heat the oil in a saucepan. Gently fry the onion for 5 minutes until soft. Add the garlic and fry for 30 seconds. Stir in the tomatoes, tamari, sherry and sugar. Season with salt and pepper to taste.
- Simmer over a low heat, stirring occasionally, while you cook the vegetables. The sauce should reduce and thicken slightly.
- Heat the remaining oil in a large pan and stir-fry the chilli and coriander seeds for a minute or two.
- Add the aubergines and mushrooms and stir-fry over a medium heat for 5 minutes.
- Add the remaining vegetables, with more oil if necessary, and stir-fry for 5 minutes.
- Stir in the tomato sauce. Cover and simmer for 10 minutes. Season to taste and stir in the sesame seeds.

- 500 grams ripe plum tomatoes, peeled and chopped

- 3 tablespoons rice wine

- 2 fresh green chilli, deseeded and chopped finely
- 4 teaspoon coriander seeds, toasted and crushed
- 2 small aubergine, cut into chunks
- 200 grams shiitake mushrooms, sliced thickly
- 4 small courgettes, cut into diagonal slices
- 2 yellow and 2 red pepper, cored, deseeded and sliced
- 4 teaspoon sesame seeds, toasted
