Preparation Method :
- Heat oil in a microwavable shallow casserole on High for 20 - 30 seconds, add onion, red or green pepper and garlic, cover and cook for 4 minutes, stir, then cook for 2 minutes longer.
- Add zucchini (courgettes), cover and cook for 4 minutes. Add eggplant (aubergine), cover and cook for 4 minutes, stir, then cook for 2 minutes longer.
- Stir in tomatoes, sherry and tomato paste (puree), cover and cook for 3 minutes, stir, then cook for further 2 more minutes. Stir in almonds and season to taste with black pepper.

- 1 green or red pepper, thinly sliced
- 1 clove garlic, crushed
- 4 zucchini, sliced
- 1 small eggplant , cut into small cubes
- 4 ripe tomatoes, cut into wedges
- 50 ml dry sherry
- 50 ml tomato puree
- 3 tablespoons ground almonds
- Freshly ground black pepper
