- Put the butter or margarine in a casserole dish. Heat, uncovered, on Defrost for 1 minute.
- Stir in the flour, then gradually blend in the stock and cream. Cook, uncovered, at least for 5 minutes until thickened, whisking.
- Stir in all the remaining ingredients and mix well. Cover with a plate and reheat for 5 minutes. Allow to stand for 5 minutes before serving on toast.

- 300 ml warm chicken stock
- 3 tablespoons double (heavy) cream
- 1 canned red pimiento, cut into narrow strips
- 250 grams canned sliced mushrooms, drained
- Salt and fleshly ground black pepper
- 300 grams cooked turkey, diced
- 1 tablespoon medium-dry sherry
- Freshly made toast, to serve
