Preparation Method :
- To make stuffing, place butter and spring onions in a small microwavable bowl, cover with a piece of absorbent kitchen paper and cook on High for 2 minutes.
- Add spinach, breadcrumbs and black pepper to taste and mix to combine. Unroll loin and spread with stuffing. Reroll and tie with kitchen string.
- To make glaze, place mustard, barbecue sauce and tomato sauce in a bowl, mix to combine and brush over lamb.
- Heat a microwave browning dish on HIGH for 4 minutes. Place lamb in centre of dish and roll to brown outside and to seal. Cook on HIGH for 3 minutes, then on Medium for 8 - 10 minutes.
- Brown the meat in a frying pan then transfer to a microwavable dish and Cook on HIGH for 4 minutes, then on Medium for 6 minutes.
- Cover lamb with aluminium foil and stand for 5 minutes.

- 500 grams boned and rolled loin of lamb, trimmed of all visible fat
- 1 tablespoon butter
- 8 spring onions, thinly sliced
- 100 grams cooked spinach, well drained
- 1 slice whole meal bread, crumbed
- Freshly ground black pepper
- 1 tablespoon wholegrain mustard
- 1 tablespoon barbecue sauce
- 1 tablespoon tomato sauce
