NUT-STUFFED PEPPER

Preparation Method :

  • Stand the pepper upright in a small dish, cutting a thin slice off the base.
  • Mix together the rice, cheese, nuts, mustard, paprika and hot water. Adjust Seasoning with salt and pepper.
  • Stuff the mixture into the pepper and replace the 'lid'. Pour the tomato juice round the pepper.
  • Cover with clingfilm and slit it to allow steam to escape. Cook on Full for 4 - 6 minutes.
  • Allow to stand for 3 - 5 minutes before serving.

INGREDIENTS

  • 1 large red or green (bell) pepper, Cut the top and reserve, fibres and seeds discarded 
  • 1 tablespoon easy-cook long-grain rice
  • 100 grams orange-coloured Cheddar cheese, grated
  • 3 tablespoons chopped walnuts or peanuts
  • ½ teaspoon made mustard
  • ¼ teaspoon paprika
  • 3 tablespoons hot water
  • Salt and freshly ground black pepper
  • 5 tablespoons tomato juice
