Preparation Method :
- Stand the pepper upright in a small dish, cutting a thin slice off the base.
- Mix together the rice, cheese, nuts, mustard, paprika and hot water. Adjust Seasoning with salt and pepper.
- Stuff the mixture into the pepper and replace the 'lid'. Pour the tomato juice round the pepper.
- Cover with clingfilm and slit it to allow steam to escape. Cook on Full for 4 - 6 minutes.
- Allow to stand for 3 - 5 minutes before serving.
INGREDIENTS
- 1 large red or green (bell) pepper, Cut the top and reserve, fibres and seeds discarded
- 1 tablespoon easy-cook long-grain rice
- 100 grams orange-coloured Cheddar cheese, grated
- 3 tablespoons chopped walnuts or peanuts
- ½ teaspoon made mustard
- ¼ teaspoon paprika
- 3 tablespoons hot water
- Salt and freshly ground black pepper
- 5 tablespoons tomato juice
