MEAT-STUFFED PEPPERS WITH TOMATO

- Put the butter or margarine in a dish and heat on Full for 2 minutes. Add the onion. Cook, uncovered, on Full for 4 minutes.
- Mix the Caster sugar with tomato juice in a jar.
- Mix in the meat. Cook, uncovered, on Full for 4 minutes. Stir in the rice, herbs, salt and half of the tomato juice mixed with sugar.
- Spoon the mixture into the peppers. Arrange upright and close together in a clean deep dish.
- Replace the lids and pour the rest of the juice into the dish around the peppers for gravy.
- Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
- Cook on Full for 16 minutes, turning the dish 3 times. Allow to stand for 5 minutes before serving.

- 4 green (bell) peppers, Rinsed, seeds and inner fibres discarded
- 2 tablespoons butter or margarine
- 1 onion, finely chopped
- 2 teaspoons caster sugar
- 150 ml Tomato juice
- 250 grams lean mince beef
- 2 tablespoons long-grain rice
- 1 teaspoon dried mixed herbs
- Salt to taste
