SPICY LAKSA

                    Preparation Method :
- Place spring onions, garlic and oil in a microwavable bowl, cover and cook on High for 1 - 2 minutes.
 - Stir in stock, coconut milk, chili sauce, sweet chili sauce and peanut butter, cover and cook for 10 minutes.
 - Stir in noodles, cover and cook for 2 minutes, stir, then cook for another 2 minutes.
 - Ladle soup into warm soup bowls, sprinkle with coriander and bean sprouts and serve.
 
INGREDIENTS
- 750 ml boiling vegetable or chicken stock, made with stock cubes
 - 250 ml coconut milk
 - 2 tablespoons chili sauce
 - 8 large spring onions, thinly sliced
 - 1 clove garlic, crushed
 - 1 tablespoon peanut oil
 - 1 tablespoon sweet chili sauce
 - 1 tablespoon crunchy peanut butter
 - 150 grams quick-cooking noodles
 - Fresh coriander leaves
 - Bean sprouts
