SPICY LAKSA

Preparation Method :

  • Place spring onions, garlic and oil in a microwavable bowl, cover and cook on High for 1 - 2 minutes.
  • Stir in stock, coconut milk, chili sauce, sweet chili sauce and peanut butter, cover and cook for 10 minutes.
  • Stir in noodles, cover and cook for 2 minutes, stir, then cook for another 2 minutes.
  • Ladle soup into warm soup bowls, sprinkle with coriander and bean sprouts and serve.

INGREDIENTS

  • 750 ml boiling vegetable or chicken stock, made with stock cubes
  • 250 ml coconut milk
  • 2 tablespoons chili sauce  
  • 8 large spring onions, thinly sliced
  • 1 clove garlic, crushed
  • 1 tablespoon peanut oil
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon crunchy peanut butter
  • 150 grams quick-cooking noodles
  • Fresh coriander leaves 
  • Bean sprouts
