MINESTRONE

This minestrone soup is really good. You will taste the vegetables and it is truly perfect to your diet. You can make it at home in your bonding moment with your family. They will surely love this. It is perfect with cheese and you can surely love this taste!

45 minutes

Preparation Method :

  • Place all the prepared vegetables in a 12 cup bowl.
  • Stir in the remaining ingredients except the water and salt, breaking up the tomatoes against the side of the bowl with the back of a wooden spoon.
  • Cover with a large plate and cook for 15 minutes, stirring three times. Mix in about three-quarters of the hot water.
  • Cover as before and cook for 30 minutes, stirring 4 - 5 times. Remove from the microwave.
  • Stir in the remaining water and the salt to taste. If the soup seems too thick, dilute with extra boiling water.
  • Ladle into deep bowls and serve with the Parmesan cheese handed separately.

INGREDIENTS

  • 350 grams courgettes (zucchini), thinly sliced
  • 250 grams carrots, thinly sliced
  • 250 grams onions, coarsely chopped
  • 150 grams white cabbage, shredded
  • 150 grams green cabbage, shredded
  • 3 celery stalks, thinly sliced
  • 3 potatoes, cubed
  • 125 grams fresh or frozen peas
  • 150 grams fresh or frozen sliced green beans
  • 420 grams tomatoes
  • 2 tablespoons tomato puree (paste)
  • 2 tablespoons macaroni, broken into short lengths
  • 1 litre hot water
  • 4 teaspoons salt
  • 100 grams grated Parmesan cheese
