MINESTRONE GENOVESE

This soup is really delicious in every taste. It has carrots, cabbage, peas, and courgettes. It is perfect to pair in dinner time. The vegetables soup suits to your healthy life. It is good to prepare with parmesan cheese. You will have enjoyable meal with this great soup!

45 minutes

Preparation Method :

  • Place all the prepared vegetables in a 12 cup bowl.
  • Stir in the remaining ingredients except the water and salt, breaking up the tomatoes against the side of the bowl with the back of a wooden spoon.
  • Cover with a large plate and cook for 15 minutes, stirring three times. Mix in about three-quarters of the hot water.
  • Cover as before and cook for 30 minutes, stirring 4 - 5 times. Remove from the microwave.
  • Stir in the ready-prepared green pesto.
  • Stir in the remaining water and the salt to taste. If the soup seems too thick, dilute with extra boiling water.
  • Ladle into deep bowls and serve with the Parmesan cheese handed separately.

INGREDIENTS

  • 350 grams courgettes (zucchini), thinly sliced
  • 250 grams carrots, thinly sliced
  • 250 grams onions, coarsely chopped
  • 150 grams white cabbage, shredded
  • 150 grams green cabbage, shredded
  • 3 celery stalks, thinly sliced
  • 3 potatoes, cubed
  • 125 grams fresh or frozen peas
  • 150 grams fresh or frozen sliced green beans
  • 400 grams tomatoes
  • 2 tablespoons tomato puree (paste)
  • 2 tablespoons risotto rice
  • 1 litre hot water
  • 2 tablespoons ready-prepared green pesto
  • 4 teaspoons salt
  • 100 grams grated Parmesan cheese
