Preparation Method :
- Place prawn shells and water in a microwavable bowl, cover and cook on High for 6 minutes. Strain, discard prawn shells and return liquid to a clean bowl or jug.
 - Stir in stock, lime juice, fish sauce, chili sauce, spring onions, lemon grass, shredded coriander, garlic, ginger, chili, coriander stalks and lemon or lime leaves, cover and cook for 5 minutes.
 - Cut prawns in half lengthwise, add to soup, cover and cook for 2 minutes or until prawns change colour and are just cooked. Sprinkle soup with coriander leaves and serve immediately.
 
INGREDIENTS
- 6 large uncooked prawns, shelled and deveined, shells reserved
 - 500 ml water
 - 500 ml boiling vegetable stock, made with stock cubes
 - 50 ml lime juice
 - 2 tablespoons fish sauce
 - 1 tablespoon sweet chili sauce
 - 4 spring onions, thinly sliced
 - 1 tablespoon thinly sliced fresh lemon grass
 - 1 tablespoon shredded fresh coriander
 - 2 cloves garlics, crushed
 - 1 teaspoon finely chopped fresh ginger
 - 1 fresh red chili, seeded and thinly sliced
 - 1 teaspoon finely chopped coriander stalks
 - 4 lemon leaves, shredded
 - Whole fresh coriander leaves
