HOT AND SOUR SOUP

Preparation Method :

  • Place prawn shells and water in a microwavable bowl, cover and cook on High for 6 minutes. Strain, discard prawn shells and return liquid to a clean bowl or jug.
  • Stir in stock, lime juice, fish sauce, chili sauce, spring onions, lemon grass, shredded coriander, garlic, ginger, chili, coriander stalks and lemon or lime leaves, cover and cook for 5 minutes.
  • Cut prawns in half lengthwise, add to soup, cover and cook for 2 minutes or until prawns change colour and are just cooked. Sprinkle soup with coriander leaves and serve immediately.

INGREDIENTS

  • 6 large uncooked prawns, shelled and deveined, shells reserved
  • 500 ml water
  • 500 ml boiling vegetable stock, made with stock cubes
  • 50 ml lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon sweet chili sauce
  • 4 spring onions, thinly sliced
  • 1 tablespoon thinly sliced fresh lemon grass
  • 1 tablespoon shredded fresh coriander
  • 2 cloves garlics, crushed
  • 1 teaspoon finely chopped fresh ginger
  • 1 fresh red chili, seeded and thinly sliced
  • 1 teaspoon finely chopped coriander stalks
  • 4 lemon leaves, shredded  
  • Whole fresh coriander leaves
