HAM AND VEGETABLE CHOWDER

Preparation Method :
- Place butter and onion in a large microwavable bowl or jug, cover and cook on High for 4 minutes. Stir in carrots and celery, cover and cook for another 2 minutes.
 - Add potatoes and 1 cup stock, cover and cook for 5 minutes.
 - Blend flour with 4 tablespoons milk to make a smooth paste. Stir flour mixture and 1 cup milk into soup, cover and cook for 4 minutes.
 - Stir sweet corn, ham and remaining stock and milk into soup, cover and cook for 10 minutes or until soup boils and potatoes are tender.
 - Stir in parsley and sprinkle with cayenne pepper to taste.

 - 1 onion, finely chopped
 - 2 carrots, diced
 - 1 stalk celery, sliced
 - 350 grams potatoes, cubed
 - 750 ml hot vegetable or chicken stock, made with stock cubes
 - 2 tablespoons flour
 - 500 ml milk
 - 250 grams sweet corn kernels, drained
 - 125 grams thickly sliced ham, cubed
 - 3 tablespoons chopped fresh parsley
 - Cayenne pepper
