GINGERED TOMATO SOUP
This gingered Tomato Soup is really amazing. The taste of tomato and ginger is really good. It has also celery stalks, medium sherry and corn flour. It is great to make this soup. You will only spend 45 minutes to cook and prepare. It is better to serve with chopped onions!

Preparation Method :
- Puree the tomatoes in a blender or food processor.
- Place the butter, margarine or oil in a 7 cup dish. Heat for 1 minute. Mix in the celery and onion.
- Cover with a plate and cook for 5 minutes. Add the pureed tomatoes, sugar, soy sauce, salt and hot water.
- Cover as before and cook for 5 - 7 minutes, stirring four times. Meanwhile, mix the cornflour smoothly with the cold water. Stir into the soup.
- Cook, uncovered for 10 minutes, stirring four times. Ladle into soup bowls and add a dash of sherry to each. Garnish each portion with chopped spring onions.

- 1 kg ripe tomatoes, blanched, skinned and quartered
- 50 grams butter or margarine
- 2 inch root ginger, finely chopped
- 1 garlic clove, crushed
- 2 celery stalks, finely chopped
- 1 large onion, finely chopped
- 2 tablespoons dark soft brown sugar
- 1 teaspoon soy sauce
- ½ teaspoon salt
- 300 ml hot water
- 2 tablespoons corn flour (cornstarch)
- 150 ml cold water Medium sherry
