CREAM OF VEGETABLE SOUP

- Prepare the vegetables according to type and cut into small pieces.
- Put into 2 litres / 3 ½ pt / 8 ½ cup bowl with the onion, butter or oil and 30 ml/2 tablespoon of the water. Cover with a plate and cook for 15 minutes or until tender, stirring four times.
- Puree until smooth in a blender. Return to the bowl with three-quarters of the milk or milk and water.
- Mix the cornflour smoothly with the remaining liquid and add to the bowl with the salt.
- Cook, uncovered for 6 minutes, stirring four times. Ladle into soup bowls and sprinkle each with parsley.

- 1 tablespoon cornflour (cornstarch)
