- Place the butter in a 7 cup dish. Melt on Defrost for 2 minutes. Stir in the flour. Cook, uncovered, for at least a minute.
- Gradually mix in the milk and water. Cook, uncovered, for 5 minutes until smooth and thickened, beating every minute.
- Stir in all the remaining ingredients. Cook, uncovered for 2 minutes, stirring twice, until hot.

- 25 grams unsalted (sweet) butter
- 25 grams plain (all-purpose) flour
- 300 ml warmed full-cream milk
- 300 ml water
- ½ teaspoon English made mustard
- A dash of hot pepper sauce
- 25 grams Cheddar cheese, grated
- 150 grams light and dark crabmeat
- Salt and freshly ground black pepper
- 3 tablespoons dry sherry
