COCK-A-LEEKIE SOUP

This soup is perfect in cold night. It needs chicken sliced, leeks, bouquet garni and long grain rice. The taste is really amazing and you will love to try it again. Try this wonderful soup that surely gives you delicious taste! It is ready to eat in about not less 55 minutes.

Preparation Time :
20 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Wash the chicken and place in a 20 cm / 8 in diameter deep casserole dish. Add the leeks. Cover with cling film (plastic wrap) and slit it twice to allow steam to escape.
  • Cook for 12 minutes. Lift the chicken out of the dish, remove the meat from the bones and cut into bite-sized pieces.
  • Reserve. Pour the water into a second, large dish. Add the salt and bouquet garni with the rice, leeks and the liquid from the casserole dish.
  • Cover with a plate and cook for 18 - 20 minutes. Stir in the chicken and prunes. Cover as before and cook for a further 3 minutes. Eat while very hot.

INGREDIENTS

  • 4 chicken portions
  • 4 leeks, coarsely shredded
  • 1 ½ litres hot water
  • Salt to taste
  • 1 bouquet garni sachet
  • 50 grams easy-cook long-grain rice
  • 12 stoned (pitted) prunes
