CHILLED CARROT AND LEEK SOUP

Chilled Carrot and Leek Soup is such a perfect soup to prepare for your family! It contains its perfect ingredients that make it perfect to be served! It can palatably be served while its hot so for sure you would love this dish to be prepared!

Preparation Time :
20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Coarsely chop the leek. Put all the vegetables in a 9 cup dish with the hot water. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook for 15 minutes until the vegetables tender. Transfer to a blender or food processor with the liquid from the dish and work to a smooth puree, adding a little of the stock if necessary.
  • Scrape into a large bowl and stir in the remaining stock. Cover and chill.
  • Before serving, gently whisk in the cream and season to taste. Ladle into soup cups and sprinkle each with cress.

INGREDIENTS

  • 1 large leek, slit and thoroughly washed
  • 4 large carrots, thinly sliced
  • 3 small-medium potatoes, cut into small cubes
  • 150 ml hot water
  • 600 ml vegetable stock
  • 300 ml single (light) cream
  • Salt and freshly ground black pepper
  • Chopped watercress
