BROCCOLI AND ALMOND SOUP

Preparation Method :
- Wash broccoli under cold running water, shake off excess water and place in a clean microwavable plastic bag.
- Twist neck of bag and fold under broccoli to seal. Place on edge of turntable and cook on High for 5 - 6 minutes or until broccoli is tender.
- Cool slightly, then place in a food processor or blender and puree.
- Place onion and butter in a microwavable bowl or jug and cook on High for 2 minutes, stir, then cook for 2 minutes longer.
- Stir in 2 cups stock, cover and cook for 6 minutes. Stir in broccoli puree and remaining stock and cook for another 5 minutes.
- Add lemon juice and almonds, cook for 1 minute and serve immediately.
INGREDIENTS
- 500 grams broccoli, cut into small florets
- 1 large onion, finely chopped
- 2 tablespoons butter
- 1 litre boiling vegetable stock, made with stock cubes
- 1 tablespoon lemon juice
- 5 tablespoons ground almonds
