BORTSCH

This bortsch soup is perfect in flavors and taste. It is really amazing with hot beef that adds to the yummy taste of the soup. It is only spend 30 minutes in cooking. You can serve it in different occasions in which you can pair in different dishes that surely will give you enjoyable meal.

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Pour the chicken stock into a 6 cup bowl. Cover with a plate and heat for 10 minutes.
  • Mash the avocado flesh with the lemon juice to a coarse puree.
  • Stir into the hot stock. Cover as before and reheat for 1 minute.
  • Garnish with grated red beet and serve hot.

INGREDIENTS

  • 500 grams raw beetroot (red beets)
  • 5 tablespoons water
  • 1 large carrot, peeled and grated
  • 1 small turnip, peeled and grated
  • 1 onion, peeled and grated
  • 600 ml hot beef or vegetable stock
  • 150 grams white cabbage, shredded
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • Freshly ground black pepper
  • 6 tablespoons soured (dairy sour) cream
