BLUSHING VEGETABLE SOUP

Preparation Method :
- Place beetroot in a clean microwavable plastic bag. Twist neck of bag and fold under beetroot to seal.
 - Place bag on edge of turntable and cook on High for 6-8 minutes or until beetroot are tender. Cool slightly.
 - Place zucchini (courgettes) in another microwavable plastic bag and secure as for beetroot. Cook for 6 - 8 minutes or until zucchini are tender. Cool slightly.
 - Place beetroot and zucchini in a food processor and process to finely chop.
 - Place onion, bacon and butter in a microwavable bowl and cook on High for 2 minutes, stir, then cook for 2 minutes longer.
 - Add vegetable mixture, stock and black pepper to taste, cover and cook for 8 minutes or until soup is hot.
 - Ladle soup into warm serving bowls, stir 1 tablespoon sour cream into each bowl and sprinkle with herbs.
 
INGREDIENTS
- 3 beetroots, peeled and quartered
 - 500 grams zucchini
 - 1 onion, finely chopped
 - 1 rasher bacon, chopped
 - 1 tablespoon butter
 - 1.5 litres boiling chicken or vegetable stock, made with stock cubes
 - Freshly ground black pepper
 - 100 ml sour cream
 - Chopped fresh herbs of your choice
