- Pour the chicken stock into a 6 cup bowl. Cover with a plate and heat for 10 minutes.
- Mash the avocado flesh with the lemon juice to a coarse puree.
- Stir into the hot stock. Cover as before and reheat for 1 minute.
- Garnish with grated red beet and serve hot.

- 900 ml well-flavoured chicken stock
- 1 large ripe avocado, peeled and stoned
- 2 tablespoons fresh lemon juice
- 2 teaspoons grated cooked beetroot
