AVGOLEMONO SOUP

The Avgolemono Soup is very delightful. It is really delicious and makes you smile in every taste. It has risotto rice, eggs and lemon. The chicken stock adds to the delightful taste of the soup. You will not find any difficulties in cooking. It is great and brilliant!
Serves :

Preparation Time :
15 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Pour the stock into a deep 7 cup dish. Stir in the rice. Cover with a plate and cook on Full for about 25 minutes until the rice is tender.
  • Thoroughly beat together the lemon juice and eggs in a soup tureen or other large serving dish. Gently whisk in the stock and rice.
  • Season to taste before serving.

INGREDIENTS

  • 1.50 litres hot chicken stock
  • 4 tablespoons risotto rice
  • Juice of 2 lemons
  • 2 large eggs
  • Salt and freshly ground black pepper
