SPICY THAI PRAWNS

Preparation Method :
- Place spring onions, garlic, ginger and oil in a microwavable casserole, cover and cook on High for 1 - 2 minutes.
- Add lime rind, lime juice, lemon grass, fresh coriander, coriander root, chili, coconut milk and stock, cover and cook for another 2 minutes.
- Place prawns around edge of casserole and place snow peas in centre.
- Cover and cook on Medium for 1 minute, stir carefully keeping prawns to the outside and snow peas in the centre, then cook for further 1 minute.
- Stir again and cook for 1 - 2 minutes or until prawns change colour and are cooked.
INGREDIENTS
- 500 grams uncooked prawns, shelled and deveined and halved lengthwise
- 125 ml coconut milk
- 6 spring onions, sliced diagonally
- 1 clove garlic, crushed
- 1 teaspoon finely chopped fresh ginger
- 2 tablespoon peanut oil
- 1 teaspoon finely grated lime rind
- 1 tablespoon lime juice
- 1 stalk fresh lemon grass, thinly sliced
- 1 tablespoon chopped fresh coriander
- 1 teaspoon finely chopped fresh coriander root
- 1 fresh red chili, thinly sliced
- 125 ml vegetable stock
- 50 grams snow peas
