PRAWNS PROVENCALE

It is a seafood recipe as this main ingredient is peeled prawn, hot fish or chicken stock, ripe tomatoes, basil leaves and there are other ingredients that makes it to be perfectly delicious. It is a perfect sea food dish that will be surely you will be craving for.

30 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Place the rice in a 9 cups dish. Stir in the hot stock and salt. Cover with clingfilm (plastic wrap) and slit it twice to allow steam to escape.
  • Cook for 10 - 15 minutes. Allow to stand for 5 minutes for the rice to absorb all the moisture.
  • Pour the oil into a serving dish. Heat, uncovered for at least 2 minutes. Stir in the onion and garlic. Cook, uncovered for 2 minutes, stirring twice.
  • Add the tomatoes with the basil and sugar. Cover with a plate and cook for 5 minutes, stirring twice.
  • Mix in the frozen prawns and seasoning to taste. Cover as before and cook for 5 minutes, then gently separate the prawns. Cook for further 3 - 5 minutes.Allow to stand.
  • Cover the rice with a plate and reheat on Defrost for 5minutes. Spoon on to four warmed plates and top with the fish and tomato mixture. Sprinkle with Parsley and serve hot.

  • 250 grams easy-cook long-grain rice
  • 500 grams frozen peeled prawns (shrimp), unthawed 
  • 600 ml hot fish or chicken stock
  • 5 large very ripe tomatoes, blanched, skinned and chopped
  • 1 tablespoon chopped basil leaves
  • 1 teaspoon dark soft brown sugar
  • 1 tablespoon Cooking oil
  • 1 onion, grated
  • 2 garlic cloves, crushed
  • Salt and freshly ground black pepper
  • Chopped parsley
