MOULES MARINIERES

- Wash the mussels under cold running water. Scrape away any barnacles, then cut off the beards.
- Discard any mussels with cracked shells or those that are open; they can cause food poisoning. Wash again.
- Put the butter or margarine in a deep bowl. Melt, uncovered for about 30 seconds. Mix in the onion and garlic.
- Cover with a plate and cook for 5 minutes, stirring twice. Add the wine, bouquet garni, bay leaf, salt and mussels. Stir gently to mix.
- Cover as before and cook for 5 minutes. Using a slotted spoon, transfer the mussels into four deep bowls or soup plates.
- Stir the breadcrumbs and half the parsley into the cooking liquid, then spoon over the mussels. Sprinkle with the remaining parsley and serve straight away.
