BALINESE PRAWN SATAY

- Place the spring onions in a food processor or blender. Add shallots, chili, ginger, lemon grass and sun-dried tomatoes and process to finely chop.
 - Remove seeds from tomato, by holding halves in the palm of your hand and squeezing, then dice flesh.
 - Heat oil in a shallow microwavable dish on High for 2 minutes. Stir in spring onion mixture, cover cook for 1 - 2 minutes.
 - Add lime juice, tomato and prawns, mix to combine, cover and marinate at least 1 hour.
 - Cut remaining spring onions. Drain prawns and thread 2 prawns and 2 pieces of spring onion onto a bamboo skewer.
 - Repeat with remaining prawns and spring onions to make eight skewers.
 - Place four skewers round edge of turntable and cook on Medium for 2 minutes or until prawns change colour and are cooked.

- 14 spring onions
 - 6 shallots, peeled
 - 1 fresh red chili, seeded
 - 1 teaspoon sliced fresh ginger
 - 1 teaspoon sliced fresh lemon grass
 - 2 sun-dried tomatoes in oil, well drained and chopped
 - 1 tomato, halved
 - 2 tablespoons peanut oil
 - 2 tablespoons lime juice
 - 16 large uncooked prawns, shelled and deveined
