JELLIED HERB SAUCE WITH LEMON

Preparation Method :
- Pour 3 tablespoons of the fruit juice into a 6 cups bowl. Stir in the gelatine. Allow to stand for 5 minutes to soften.
- Melt, uncovered, on Defrost for 2½ minutes. Stir in the remaining juice with the salt.
- Cover when cold and chill until just beginning to thicken and set round the edge.
- Mix in all the remaining ingredients. Transfer to a small serving dish and chill until set completely. Spoon out on to plates to serve.
INGREDIENTS
For fish
- 2 tablespoons chopped mint
- 3 tablespoons snipped chives
- 500 ml white grape or apple juice
- 2 teaspoons grated lemon rind
- 1 tablespoon powdered gelatine
- ½ teaspoon salt
- 50 grams chopped parsley
