JELLIED HERB SAUCE WITH LEMON

Preparation Time :
20 minutes

Cooking Time :
5 minutes

Preparation Method :

  • Pour 3 tablespoons of the fruit juice into a 6 cups bowl. Stir in the gelatine. Allow to stand for 5 minutes to soften.
  • Melt, uncovered, on Defrost for 2½ minutes. Stir in the remaining juice with the salt.
  • Cover when cold and chill until just beginning to thicken and set round the edge.
  • Mix in all the remaining ingredients. Transfer to a small serving dish and chill until set completely. Spoon out on to plates to serve.

INGREDIENTS

For fish

  • 2 tablespoons chopped mint
  • 3 tablespoons snipped chives     
  • 500 ml white grape or apple juice
  • 2 teaspoons grated lemon rind
  • 1 tablespoon powdered gelatine
  • ½ teaspoon salt
  • 50 grams chopped parsley
