CUMBERLAND SAUCE

Preparation Method :

  • Put the mustard, sugar, ginger, cayenne wine or port in a 6 cups bowl and heat, uncovered on Full for 4 - 6 minutes , stirring 2 - 3 times.
  • Mix in the cornflour smoothly with the cold water. Mix into the wine ingredients with the remaining ingredients.
  • Heat uncovered on Full for 6 minutes, stirring every minute or until the sauce is thickened and smooth and the jelly has melted. Serve hot.

INGREDIENTS

  • 75 grams redcurrant jelly      
  • 1 teaspoon mild made mustard
  • 2 tablespoons light soft brown sugar
  • ¼ teaspoon ground ginger
  • A pinch of cayenne pepper
  • 300 ml dry white wine or port
  • 2 whole cloves
  • 1 tablespoon corn flour
  • 2 tablespoons cold water
  • 1 teaspoon grated orange peel
  • 1 teaspoon grated lemon peel
  • Juice of 1 small orange
  • Juice of 1 lemon
