ARTICHOKE SALAD WITH PEPPERS AND EGGS IN WARM DRESSING

- Arrange the artichokes and the pimientos alternately round a large plate, leaving a hollow in the centre.
- Put the vinegar, lemon juice, oil, garlic, mustard, salt and sugar in small bowl. Heat, uncovered, on Full for 1 minute, beating twice.
- Pile the eggs and cheese in a mound in the centre of the salad and gently spoon over the warm dressing.

- 350 grams can artichoke hearts, drained and halved
- 350 grams can red pimientos, drained, cut into strips
- 2 teaspoons red wine vinegar
- 50 ml lemon juice
- 150 ml Cooking oil
- 1 garlic clove, crushed
- 1 teaspoon continental mustard
- 1 teaspoon caster sugar
- 4 large hard-boiled eggs, shelled and grated
- 250 grams Feta cheese, diced
- Salt to taste
