SMOKED FISH QUICHE
Some ingredients for this shortcrust pastry, smoked fish like mackerel or haddock, with eggs, mayonnaise, cheddar cheese as well as other ingredients like flavorings and spices. It is so easy to prepare and this is delicious and good for a healthy diet.

Preparation Method :
- Lightly butter a china flan dish. Roll out the pastry and use to line the greased dish. Prick well where the side meets the base.
- Cook, uncovered for 5 minutes, turning the dish twice.Press down with fingers protected by oven gloves, if any bulges appear.
- Brush the inside of the pastry case with the egg yolk. Cook for 1 minute to seal any holes. Remove from the oven.
- Cover the base with the fish. Beat the eggs with the cream and mayonnaise, seasoning to taste. Pour into the quiche and sprinkle with the cheese and paprika.
- Cook, uncovered for 5 minutes. Serve warm with salad.

- 150 grams shortcrust pastry (basic pie crust)
- 1 egg yolk, beaten
- 100 grams smoked fish such as mackerel, haddock, cod or trout, cooked and flaked
- 3 eggs
- 150 ml soured (dairy sour) cream
- 2 tablespoons mayonnaise
- Salt and freshly ground black pepper
- 75 grams Cheddar cheese, grated
- Paprika
- Mixed salad
