PIPERADE WITH GAMMON
This dish perfect for breakfast and also for dinner, it is light and perfect to your diet. It is really good that has chopped ham and basil leaves. It adds to the unique flavour of the food. You don’t find difficulties in preparing this food. You can make it within little time!

- Pour the oil into a deep dish and heat, uncovered for 1 minute. Stir in the onions and peppers.
- Cover with a plate and cook on Defrost for 10 - 12 minutes until the vegetables are tender.
- Stir in the coarsely chopped ham, tomatoes and basil and season to taste.
- Cover as before and cook for 5 minutes.
- Thoroughly beat together the eggs and cream and season to taste. Pour into the dish and combine with the vegetables.
- Cook, uncovered for 5 minutes until lightly scrambled, stirring every minute.
- Cover and allow to stand for 5 minutes before serving with crisp toast. Top each with a grilled gammon rasher. Garnish each portion with sliced stuffed olives.
INGREDIENTS
- 125 grams coarsely chopped ham
- 2 tablespoons Cooking oil
- 2 garlic cloves, crushed
- 3 onions, very thinly sliced
- 2 green (bell) peppers, seeded and finely chopped
- 6 tomatoes, blanched, skinned,seeded, and chopped
- 1 tablespoon chopped basil leaves
- Salt and freshly ground black pepper
- 6 large eggs
- 4 tablespoons double (heavy) cream
- Toast, to serve
