POTATO PIZZA

Preparation Method :

  • Put the potatoes in a 3 cup dish with the water and salt. Cover with clingfilm and slit it to allow steam to escape.
  • Cook on Full for 6 - 8 minutes. Uncover and drain. Mash finely, then beat in the milk and butter.
  • Smooth the top and clean the side of the dish. Sprinkle with the cheese.
  • Mix together the pesto and ketchup and trickle over the cheese. Cook, uncovered, on Full for 2 minutes. Garnish with the olives and serve hot.

INGREDIENTS

  • 75 grams orange-coloured Cheddar cheese
  • 1 teaspoon pesto
  • 1 tablespoon tomato ketchup
  • 250 grams potatoes, peeled and cut into small chunks
  • 2 tablespoons water
  • ½ teaspoon salt
  • 2 tablespoons milk
  • 2 teaspoons butter or margarine
  • 6 black olives
