- Mix together the tomato puree, olive oil and garlic and spread on to the crumpets.
- Arrange the tomato slices on top. Cover with the cheese and stud with the olives.
- Heat one at a time for about 2 minutes until the cheese is starting to melt. Eat straight away.

- 1 garlic clove, crushed
- 4 hot toasted crumpets
- 2 tomatoes, thinly sliced
- 150 grams Mozzarella cheese, sliced
- 12 black olives
