TUSCANY BEAN SAUCE WITH PASTA

Preparation Method :
- Rinse broad beans under cold running water, drain and place in a clean microwavable plastic bag.
- Twist neck of bag and fold under beans. Place bag on edge of turntable and cook on High for 1 - 2 minutes.
- Place anchovies, garlic and oil in a microwavable bowl, cover and cook on High for 1 minute.
- Stir in tomatoes, artichokes, olives and broad beans, cover and cook on Medium for 6 minutes or until hot.
- Spoon sauce over hot pasta, sprinkle with pine nuts and serve immediately.
INGREDIENTS
- 350 grams pasta, freshly cooked
- 75 grams pine nuts, toasted
- 100 grams shelled fresh or frozen broad beans
- 25 grams anchovy fillets, drained and chopped
- 2 cloves garlic, crushed
- 1 tablespoon Cooking oil
- 500 grams tomatoes, drained and chopped
- 150 grams marinated artichokes, drained and sliced
- 9 olives, pitted and sliced
