RED PESTO WITH PASTA

Preparation Method :

To make pesto: Place red pepper into a clean microwavable plastic bag. Twist and fold the neck of the bag under red pepper to seal.
Place bag on edge of turntable and cook on High for 2 minutes. Stand for 5 minutes or until pepper is cool enough to handle. Remove skin from pepper using a sharp knife.
Place red pepper, sun-dried tomatoes with oil, pine nuts and garlic in a food processor and process to make a rough paste. Add Parmesan cheese and oil and process briefly to combine.
Spoon pesto over hot pasta, sprinkle with Parmesan cheese and serve hot.

INGREDIENTS

350 grams pasta, freshly cooked
75 grams grated Parmesan cheese
1 large red pepper, quartered
25 grams sun-dried tomatoes in oil, chopped and oil reserved
2 tablespoons pine nuts
2 cloves garlic, crushed
50 grams grated Parmesan cheese
1 tablespoon Cooking oil
